Learn how to break down one side of locally raised pork with our head butcher in this 3-4 hour class. We will teach your group (up to six students) basic knife skills and grips, how to portion the animal into primal and retail cuts, review the pig anatomy, how to tie roasts, and how to package the meat to last in the freezer. This is a hands-on class and each student will bring home 2-3 pounds of their own butcher work. Thursday classes start at 7pm.
