Learn how to break down one side of locally raised pork with our head butcher in this 3-4 hour class. We will teach your group (up to six students) basic knife skills and grips, how to portion the animal into primal and retail cuts, review the pig anatomy, how to tie roasts, and how to package the meat to last in the freezer. This is a hands-on class and each student will bring home 2-3 pounds of their own butcher work. Thursday classes start at 7pm.

*Classes are non-refundable and rescheduling is not permitted. Please understand that The Heart and Trotter is a small, locally-owned shop. We order extra product weeks in advance for use in classes, and classes require a lot of preparation on behalf of our employees. Please take this into consideration before picking a date. Gift Cards available for classes if customers are not sure what date they would like to attend.

    My husband & I just finished Pork 101- I highly recommend taking a class with these fabulous folks! We learned how to safely use several types of knives & a saw, where and how to make our cuts to break the hog down, all kinds of finished cuts including a few you’ll never see at a grocery store, how to tie a perfect boneless chop, and so much more. David is an awesome instructor and even grilled us up a sample at the end of class. Once you’ve tasted their pork you’ll never be satisfied with tasteless mass produced meat again. Thank goodness the class includes a good amount to take home! I can’t even begin to tell you how impressed we are with this shop, the people, their mission, and of course, the absolutely incredible meat!
