Learn how to break down one side of locally raised pork with our head butcher in this 3-4 hour class. We will teach your group (up to six students) basic knife skills and grips, how to portion the animal into primal and retail cuts, review the pig anatomy, how to tie roasts, and how to package the meat to last in the freezer. This is a hands-on class and each student will bring home 2-3 pounds of their own butcher work. Sunday classes start at 5pm.

We order extra product weeks in advance for use in classes, and classes require a lot of preparation on behalf of our employees. Please take this into consideration before picking a date.
